We are not a large roastery and we are not trying to become one. We roast what is ordered, because everything else ages in a warehouse.
Why a roast date, not a best-before
Every bag carries the day the coffee left the drum. A best-before date is two years away and means nothing: the coffee is safe, but it is not good.
The useful window is between the third day and the second month. That is why we roast Thursday and ship Friday — so you land inside it rather than miss it on a shelf.
